Während sie die Pflaumen abwiegt kommt mir der Gedanke, wie viele Zahlen man sich doch merken muss im täglichen Leben. Nervös gebe ich die Geheimzahl meiner Bankkarte ins Registriergerät ein. Hoffentlich richtig und ohne Zahlendreher. Und nicht mit der Nummer der anderen Geldkarte verwechseln. Der Vorausschauende kennt auch in Zeiten elektronischer Telefonregister im Handy die wichtigsten Telefonnummern auswendig. Für den Fall, dass er seine Handy-PIN vergisst. Wem die Rufnummer fehlt, der kann die Auskunft anrufen. Verwählt. Kein Anschluss unter dieser Nummer. Zahlenbürokratismus. Ausweisnummern, Steuernummern, Kontonummern, Kreditkartennummern, Versicherungsnummern, Hausnummern, Aktennummern, Listennummern, Registrierungsnummern, E-Nummern, Servicenummern, IP-Nummern, Autonummern, DIN-Nummern, Identifizierungsnummern. Aneinandergereiht würden die persönlichen Nummern eine lange Schlange ergeben. Ziehen Sie eine Nummer und stellen Sie sich hinten an! Wie war noch gleich die Nummer für gelben Pflaumen?</p>

<p>4 große Rouladen<br />
Süßer Senf<br />
8 Scheiben Speck<br />
Mehl</p>
<p><b>Füllung:<br />
</b>2 kleine Zwiebeln<br />
150 g getrocknete Pflaumen<br />
3 Knoblauchzehen<br />
Merlot</p>
<p><b>Sauce:<br />
</b>Wurzelgemüse<br />
Knochen<br />
Merlot, Fonds<br />
Creme Fraiche<br />
Pfeffer, Petersilie, Muskatnuss</p>
<p>Zuerst die Füllung zubereiten: Zwiebeln andünsten, Pflaumen hinzu, zum Schluss Knofi, mit einem Schuss Wein ablöschen und einkochen lassen. Rouladen, mit Salz, Pfeffer und Senf einreiben, Speckscheiben auflegen, füllen, rollen und zubinden. Mit Mehl bestäuben und portionsweise mit Wurzelgemüse und Knochen anbraten, Rouladen in ein Auflaufform. Bratensatz mit Wein und Fonds ablöschen, würzen und über die Roulladen gießen. Rouladen benötigen viel Flüssigkeit. Im Ofen zwei Stunden schmoren (220 Grad, später weniger). Rouladen, aus dem Bratenfond nehmen und abgedeckt in den abgeschalteten, aber warmen Ofen zurück. Sauce einkochen und würzen.</p>
<p>Mein Merlot am Wochenende war ein italienischer von San Leonardo aus dem Trentino (Vigneti di Dolomiti DOC)  2004. Die Farbe war granatrot und relativ hell. Im Geruch tritt die slowenische Eiche sofort deutlich hervor. Dann auch pfeffrig der Alkohol, ferner Tabak, dichte Frucht, Kirsche, Himbeere, Rose, Sanddorn, Muskatnuss. Der Geschmack zeigt eine frische Säure, wieder feurig-pfeffrig der Alkohol, Frucht. Der Körper ist rund, extraktreich und lang. Die Tannine haben eine deutliche Reife und nur noch wenig Biss. Anfänglich hatte der Merlot ein schönes Gleichgewicht zwischen strenger Säure und reife Noten, später wirkt er etwas müde. Und insgesamt etwas zu alkoholisch. Zu den Rouladen passte er ausgezeichnet, mein Favorit wird es aber nicht.</p>
