today's recipe, is 2 simple chinese cooking.

Bitter gourd Omelette

Bitter Gourd - cleaned, sliced into pieces

garlic clove - peeled, coursely chopped

eggs - slightly beat

salt

This is a very very easy and simple dish to do, especially if you like the bitterness of bitter gourd, you will like this. once the bitter gourd is cleaned and sliced, sprinkle salt on it. leave it for use later. then, heat the oil. ( not too much of oil. just enough to wet the surface of the wok. put in the garlic and the bitter gourd. stir fried for about 5 minutes, ( to do away the rawness). then, pour the eggs in. fried it till dry and that's it.

      2. Fried cabbage with dried shrimp

cabbage

dried shrimps

garlic

dried scallops ( optional)

soya sauce

heat the wok, with some oil. then, put in the garlic, dried shrimp, and dried scallops in. stir and wait till it become golden brown then pour in the cabbage. stir fried it for 3 mins, dazzle some soya sauce in. be careful, as the dried shrimp and scallop taste saltish. if u like it crispy and crunchy, then take it out, that's it. but if u like it soft, add in some water, then cover the wok, shimmer for 3 mins and it's ready to be served.

Once my baby reached 12 months of age and was able to eat most of the things that an adult can eat,

Once my baby reached 12 months of age and was able to eat most of the things that an adult can eat, I was keen for all of us to start eating the same things together at dinner. This meant changing how I cook as I’ve always been rather generous with my spices and seasoning. However, a big plus was that it meant only having to cook one meal!

Some things I find helpful when cooking for a toddler

When I’m making something freezable, such as a stew or casserole, I always make extra and freeze the leftovers in baby-sized portions. These can then be defrosted and reheated for lunches later in the week.

I’m very wary of salt and salty foods. The government recommends that between 1 - 3 years old, a child should have no more than 2g of salt per day. I never add salt to anything I’m cooking, including the cooking water for vegetables and pasta and I give my daughter unsalted butter and avoid salty foods like bacon. I also only ever use homemade stock or water as most ready-made stocks and stock cubes are incredibly high in salt.

Cooking with a baby in tow can be a bit stressful (particularly when they’re tired and hungry!), so, to keep my daughter entertained, I’ve put the travel cot in the kitchen and use it as a playpen. It means I can still chat and sing to my daughter so she doesn’t get grumpy, but allows me to get on with my chores. I’m also planning on getting a slow cooker soon so that I can cook in peace whilst she has her nap, thereby eliminating the need to sing nursery rhymes and do ridiculous dances around the kitchen whilst I’m cooking....

Some simple meal ideas

Salmon fillets baked in foil parcels served with boiled potatoes and steamed runner beans

Griddled Tuna Steaks served with brown rice and steamed broccoli

Family Frittata (see below) served with salad and crusty bread

A simple meat and vegetable stew.

Lamb Tagine served with rice or couscous (recipe to appear in future post).

Family Frittata

Makes enough for 2 greedy adults and a toddler or 2 adults and 2 toddlers.

6 eggs

1 onion, peeled and finely sliced

1 red pepper, deseeded and sliced

1 medium-sized courgette, cut into bite sized chunks

350g potatoes, peeled and cut into bite sized chunks

10g parmesan cheese, finely grated

generous pinch of smoked paprika (optional)

Fry the onion gently in a little olive oil until soft. Add the red pepper and courgette and continue to cook gently. Meanwhile, steam the potato cubes until just soft (so they still hold their shape) for approximately 10 minutes. When the pepper and courgette are soft, add the potatoes, sprinkle over the paprika and stir gently.

In a large measuring jug or mixing bowl, lightly beat the eggs together with the parmesan cheese. Add the cooked vegetables to the eggs and mix well. Pour the eggs and vegetables into the frying pan and cook very gently for approximately 30 minutes or until most of the egg has set. Finish off under a hot grill. Allow to cool slightly then cut the toddlers portion into bite size cubes

So I'm still quite bloated and gross from overeating on the weekend. I'm beginning to think I screwed up my body a bit...

So I decided I would try to be especially conscious of what I was eating for at least the next few days. But that never works out all that well for me. I told myself I was going to go especially easy on the carbs today, mainly in bread form, but what did I do instead? Snack on bread in what seemed to be every spare second I was craving any kind of food. I think it's because we went grocery shopping and seemed to buy too much fresh bread (one loaf of ick white and one loaf of great rye - I ate my fair share of both).

But anyway. I started off well. First bites of the day involved these grapes.

Then I made the greatest smoothie ever. Well, that I've ever made in my own kitchen for myself that is. I had never tried protein powder in a smoothie until this morning. So I decided to do that. My brother bought a big container of chocolate whey protein powder a while back and has hardly used any, so I threw half a scoop into the Bullet with 3/4 of a frozen banana, a cut up peach, a container of strawberry yogurt, half a cup of almond milk and some crushed ice. It was thick and creamy and delicious. More like a milkshake than a smoothie. I could have had three of these. At one time. I might have to have one again tomorrow. Maybe try some different fruit in there.

After a workout and before heading out for a car oil change and a grocery trip, I finished off the container of cottage cheese.

Then upon returning home is when all the bread eating disasters went down. I had some of this here white bread with avocado...

Then had several more small pieces plus a large piece of rye, eaten in pieces throughout the course of the day. I also tried to get some veggies in there, so I had a small salad with balsamic vinegar and dijonnaise.

Plus some grapes, but I ate several more above this small handful throughout the day. I'm so bad at getting pictures of all of the snacks I eat.

And then there was some Crystal light with frozen berries and mango chunks thrown in. I love fruit infused beverages, they are just so much fun to drink with all of those fruity chunks. Plus they look pretty. :)

When dinnertime rolled around, before making my own I had a tiny bite of my brother's frozen pizza. I wanted much more than that, but I proudly resisted. I'm sure he was grateful since otherwise I would have ended up consuming half of his dinner.

Then I made my own tasty dinner - an omelette filled with spinach, salsa, tomato slices, and this feta red pepper dip stuff we bought at the grocery store sometime last week. Slightly higher in fat/calories than I would like, but otherwise I would have added cheese to the omelette, which would have been similar in nutritionals anyway, so it evened out.

I also had some leftover hashbrown casserole from when all my family was here visiting. This stuff has no nutritional positives whatsoever. And I ate a lot more than the tiny amount in that picture. Luckily it is all gone and out of the fridge now. No more picking at that crap.

I was stuffed by the end of all this, but I had to have something sweet and really wanted to finish off the approximate fifth of a container of this plain balkan style yogurt I've been taking bites of here and there over the course of several days. This was a new try for me and although I really like the balkan style (whatever the heck that means) for it's thick and creamy texture, it is not available around here in anything other than full fat, so I probably won't be buying it all that often. Maybe only once in a while when it's on sale, which it was this time around.
I mixed this with some banana slices, FF maple syrup and FF strawberry jam.

Later this evening I hung out with a friend, got some tea, went for a walk, and then she was hungry so we stopped at one of the hot spot local diner for some late night eatings. I discovered I was kind of hungry too, so I got an english muffin and topped it with a very small amount of strawberry jam. It was exactly what I was craving and hit the spot.

Yeah. So so much for the low carb day. I doubt tomorrow will be much better. I don't feel like being that strict on myself. And now it's ridiculously late and I should really be sleeping. So night all!

Quick! Make plans. We had a whole weekend with nothing on the calendar, but we made quick work of those two empty boxes.

Saturday we headed over to Missy's place for a swim under the Bay Bridge, literally.

The water is heated, but that didn't do anything to calm down the wind chill when we were getting out...brrr! Lilia still didn't seem convinced that a pool is more fun then her sink bath, but she did do some good swimming on her belly and floating on her back and we dunked her under which she tolerated, barely. It was a bit cool and near her lunch time so we'll try again on a warmer SF day soon!

After our swim, and brief hop into the jacuzzi, we hung out with Missy and her cat Lola, had lunch then did a bit of shopping while Lilia napped in the Ergo.

While shopping I got a text from Shelby saying she was in town from NYC, so I organized a super last minute brunch with her, Keri and Paul for this afternoon.

They all laughed at me when I told them we were poaching omelette's in little ziplock bags, but they were so good everyone but egg-hater Paul had two. Thank you Paula Dean!

Fun stuff can happen when you have no plans.

This colourful creation is easy and quick to make, filling yet healthy, and absolutely delicious! When you're in a time crunch, an omelette will offer an ideal vehicle for transferring an assortment of fresh vegetables out of your refrigerator and into your body! To keep it healthy and low in fat, I prefer to use chevre - a soft goat cheese - instead of more fatty cheeses. This recipe will make two tasty omelettes!

Ingredients:

4 large eggs
Couple of tablespoons of milk
2 small leeks (1 inch diameter), sliced a half inch thick (white and green parts)
1 large plum tomato, chopped
2 massive handfuls of baby spinach
Couple of tablespoons chevre, a soft goat cheese (plain or garlic and herb)
Olive oil
Salt and pepper

Directions:

In a small nonstick frying pan, heat one teaspoon of olive oil. Add chopped leeks and saute under tender, about 4 minutes. Add a large pinch of salt and some cracked pepper and stir. Add chopped tomato and stir fry another minute. Add baby spinach and gently combine vegetables until spinach is wilted, but still bright green, about 3 minutes. Remove filling from heat and set aside in a bowl.

While vegetables are cooking, crack four eggs in a bowl and beat until fluffy. Add a couple of tablespoons of milk, salt and pepper. Combine. In a non-stick pan, heat 1 tsp of olive oil (if you are a novice omelette maker you might want to add more, but realize you are increasing the fat content of your omelette should you choose to do so). When hot, pour half of the eggs into the pan, spreading them as wide as possible. Cook over medium heat until bottom is cooked and the raw egg on top is barely runny. When omelette appears set, gently flip it over using a spatula and let the raw side cook over medium heat.

Add half of the vegetable mixture to the top cooked portion of the omelette. Break one tablespoon of chevre into small pieces over half of the omelette. When bottom appears cooked, flip one half over the other, allowing cheese to melt slightly and transfer omelette to a plate. Repeat with remaining eggs, vegetables and cheese. Alternatively, you could use two pans and cook both omelettes at once!

Enjoy!

Total Cook Time: Under 20 minutes

Serves Two

I set the alarm clock on my phone for 6 a.m., and rolled out of bed not too long after that. The sun hadn’t quite risen yet, but we were pulling into Toledo. Which meant I had to make sure the window curtain was totally shut, and it was.

We were supposed to get to Toledo at 4:56 a.m., so between that and a few stops we’ve had since it looks like we’ll probably be an hour and a half late at best. That should still be enough time for a good batch photo upload.

The good news was that I had a high-speed aircard signal, so I logged on and watched a few minutes of the Germany-Brazil Olympic women’s soccer opener. The game ended scoreless, so I I feel a little better about leaving for breakfast in the 88th minute.

Breakfast is open seating, so I wanted to get there as early as possible. There was still a 20-minute wait for a table, so I walked all the way to the back of the train and took the picture you see above out the back window. We were just west of Swanton, Ohio at the time.

I then returned to the lounge car to wait to get into the dining car, and was called with three other people at around 7:15. All three were senior citizens; one woman who lives just east of Capitol Hill and a couple from Atlantic County, N.J. So there was plenty for us to talk about.

The breakfast choices were an omelette (plain, cheddar cheese or spinach and feta), scrambled eggs with potatoes or grits, french toast, or a continental combination of cereal and fruit. I went for the french toast and it was quite good.

I’ve just now tuned into the U.S.-Norway women’s soccer game and I see Norway is winning 2-0 in the 36th minute. I don’t know how the goals were scored but this is a pretty disastrous start for the United States. Without Abby Wambach it’s going to be hard to come back from a hole like that, even if there is a lot of time left.

I’ve lost the high-speed aircard signal, though, so I’m going to go back to packing and editing some photos on the computer. I’ve also got some reading to do.

I’ll probably check back in near South Bend. Apparently there’s a good view of the Notre Dame campus, and it’s also the point when the clocks get set back an hour.

Then the countdown begins to Chicago, and to my first ever trip to Wrigley Field. Plenty more on that to come.

I didn't have time to go grocery shopping yesterday, and I had TWO containers of mushrooms that needed to be used quickly. I had to improvise. I decided to make jazzed-up mushroom omelettes for dinner. I sauteed all the mushrooms in butter, then added some Jane's Krazy Mixed-up Salt, and some garlic chives that were also on their way out. I added some Silk soy milk to 2 beaten eggs (3 eggs for Toby's omelette), then put them into a buttered omelette pan. Once the inside was cooked, I (tried to) spread out a little of the Alouette light garlic and herb cheese spread, then added the sauteed mushrooms and chives. I served this with some potato pancakes and a light green salad.

Immediately we were impressed by the menu that has at least 13 salad and 22 sandwich offerings (more if you consider that some of the sandwiches have several breads to choose from.) Rather than a side of greasy potato chips out of a bag, Crawford's offers more healthy options like fresh cut fruit, pasta, side salad and cole slaw. My wife's salad and my sandwich both had dried cherries and quality chicken and cheeses, which were both satisfying and tasty. The Crawfords and our waitstaff were prompt, friendly and inviting.

Seeing that they offer quite an interesting variety of omelettes, 14 by my count, we had breakfast there the next morning. We were both impressed with the Spartan Omelette my wife ordered, not because I went to MSU, but because of its fresh ingredients. We've ordered omelettes with "fresh" spinach at other area restaurants only to get drippy, shredded spinach out of a can. Crawford's put fresh, whole (small) leaf spinach in the omelette and it tasted great! I really enjoyed my corned beef hash which was not like the typical dog-food-like concoction at many family restaurants. The potatoes and corned beef were fresh, not factory processed mush.

The weather was great so we took advantage of it and ate outside both days. The outside dining area was spacious and pleasant. If you want to eat there in bad weather, seating is limited inside so get there a bit before the usual breakfast or lunch rushes.

For breakfast or lunch, I highly recommend Crawford's. They sell unique items, made with good ingredients, at good prices, and with good service. What more could you ask for?

Crawford's Kitchen is at 542 Starkweather, in Old Village.

I woke up this morning around 6:30. I could have easily slept more but I made myself get up. This is so strange! Normally I'm totally bright eyed around 6 or so and you can't pay me to stay in bed. My only explanation is possibly hormones? Which I'm still experiencing all those lovely side effects of. Blah!

I had a cup of coffee as soon as I woke up and was kind of in a hurry to eat so I could digest and then go to the gym. I simply decided on a Light and Fit and All Bran. I ate it straight out of the cup today and just poured the All Bran in (in an effort to both save time and dirty fewer dishes!).

After that I took the dogs on a quick walk and then headed to the gym. Today was quads/calves/abs for 45 mins and then cardio for about 30. It was a pretty good workout today. Leg workouts always get me nice and sweaty!

When I got back I had a simple omelette (with a bit of RF cheese and sundried tomatoes) and also a smallish apple with 2 tbsp PB on the side.

How's that for lazy presentation??? I was in a hurry so I didn't bother making it look pretty or wiping off those gross crumbs from scraping the omelette onto the plate! The omelette was all sorts of ferosh. Cheesey and the sundried tomato was an awesome touch!

The apple was a bit too tart for my taste but I ate it anyway because each piece was slathered in PB and that makes anything good. I ate it and tried to pretend it was a crisp and sweet Fuji apple rather than a bland and sour Granny Smith.

I'm off to work now! I got a loooong day. I have a break this afternoon... maybe I'll come home for an unneeded but much desired nap! ;)

Waaaah...

INGREDIENTES (6 personas):

2 Patatas grandes (preferiblemente viejas).

I couldn't find my bathing suit so I had decided to go in search of a new one at the Eaton Centre. Sears Canada doesn't seem to carry anything above size 16 unless the woman has huge tits - which I don't, I'm a happy little B-cup. I went to Bikini Village and of course there was nothing. Addition-Elle had closed their store at the TEC and I wasn't prepared to walk down to it after walk up to TEC. I found it disheartening to not be able to find anything. Does the vast majority of the retail world believe that fat women don't wear bathing suits? That we don't enjoy frolicking in the water?

I didn't buy anything. Got home and went through my stuff and found my old bathing suit.

On to my dinner - I hadn't prepared anything ahead of time, nothing was defrosted and I didn't want to give in to the temptation of making some pancakes. Instead I was good and made myself a mushroom and tomato omelette.

I have also started to track how many steps I take in a day. Yesterday I did 7,500 steps and today it was 9,200 steps.

I'm currently waiting to hear from Diresquirrel with regards to an outing to a beach tomorrow.

"Eh, oui..."

"Comme le temps passe vite..."

"Alors, bon week-end..."

"A bientôt..."

"Vendredi prochain, alors..."

"Salut... Oui, salut..."

My toe, my poor little toe! I am not the whiny type that complains about pain, but this joker hurts. I will spare you the details, but Kayla and Amber were lucky enough to see it uncovered and it was enough to force them into their car and out of the parking lot? Kind of Frankensteinish. The bad part is that I don't even know how it happened. Well, I know how it happened, but I don't know how so much damage was caused in one freak accident. It started as a great night breaking in the new Rock Band game for the Wii. Evan and Heather came over for some omelets and banana pancakes and then it was on! We all laughed and played with no cares in the world. My daughter Adyson had an issue with not touching my, I mean the kids, new toy all night long. Towards the end of the night I caught her attempting to dismantle the drums so I took action. I jumped up and scooped her in my arms to take her into her room for her "punishment". (can't say spanking these days b/c someone will report you. Whatever you call it, she was about to get a whoopin'.) The next step was the fatal one that brought an awkwardly abrupt ending to our night of fun. I planted my right foot directly on a blanket and slid across the floor into the hallway. Keep in mind that Adyson was still squirming in my arms the entire time. On my way down I landed on Micah's keyboard that for some strange reason was sitting in the middle of the hall. I was able to save Adyson from the impact, but my left leg and pinky toe absorbed the all the impact. I got up, trying to pretend it didn't hurt, and put Ady in her bed. Then I hurried to the kitchen apply direct pressure and stop the bleeding. I don't know what I cut my toe on, but somehow I have multiple lacerations and brusing that have caused me pain like I cannot describe! Who knew your little bitty toe could be so important to standing up and walking? No spiritual implications or deep theology for this story yet. Just a weak attempt for sympathy.

Baooon.

It's kitchen time !
